I'm watching these videos as I'm quite interested in veganism, but I see such a lack of protein and fat in these recipes! It's all carbs! As someone who has seen huge health benefits in the past by lowering carbs and upping fats and proteins, I am unsure how my body would react to this…

Go to local markets, green grocers or farm shops to get better deals and produce than supermarkets. They have alot of local produce and stuff which is ready to eat on the day which will be super affordable. And alot of the time you just get given stuff for free if its unsellable. Also if you dont have money for food but you have a couple hours free time you can offer your time, services or crafts to people who grow food and in exchange they can give you produce or plants to grow your own.

I prefer vegan/plant based etc however after 20+ years I finally have a nutritionist and she is teaching me how to eat more balanced meals. Your meals are carb loading and nit to the US RDA standards. There are vegan protein sources like tofu, edemame, peanuts, pea protein, nondairy yogurts etc. You have to know what is a serving of carbs (2-3per meal) not 4. Also get your blood checked once a year for vitamin deficiencies, I was low iron, fixed that, and critically low vitamin D, and low electrolytes. Consult someone with a masters degree in nutritional science for optimal health.

When you go vegan should you eat larger portion sizes than meal containing meat? Don’t wanna accidentally starve myself or anything 😅

Many of your recipes are not balanced at all. Very low protein and zero fat. That's not a healthy diet to promote!

By that, I mean your diet, not a vegan diet. I'm vegan myself.
