ive never made meringue cookies , but they look like they melt right in your mouth or dissolve very easily? if so, I wonder if I could make this for my toddler as a snack. you know those baby snack that melt easily in their mouths?

Ok. Dumb question, but if I don't add vanilla extract, will it still taste a bit like vanilla? If not, what would it taste like?

I'm considering trying something like this for Christmas. BUT I was thinking about replacing the strawberry dust with either crushed/blended peppermint candy OR cocoa powder. What do you think?

Cool! My son and I just built a solar dehydrator which is working really well (mile high very dry and hot here, Colorado Plateau) and last week did strawberries. Now I know what to do with em. Thanks!

+Barbara Holmes Yes, Stevia will not work. Next time, please feel free to ask about substitutions before making the recipe since I would have told you not to try it 😉 The sugar is necessary to form the structure of the meringue. You can think of the aqua faba whip as the scaffolding and the sugar as the concrete or wood that makes the actual structure. Does that make sense? Stevia does not have these qualities at all and will not be a suitable substitute in any recipe where the sugar creates the structure.

I'm sorry you won't be able to enjoy this recipe as you have a different experience with sugar.

Personally, I don't find regular sugar to be a problem as I incorporate it into a balanced diet of whole and minimally processed plant-foods as well as the occasional treat of more processed foods for pleasure and variety. I have seen no credible scientific studies of showing significant harm caused by the ingestion of sugar taken in normal doses by generally healthy humans.  Conversely, I have seen many articles that claim harmful effects but are not backed up by reliable evidence.

These look delicious! Have you tried making macarons? That is one thing I haven't been able to find veganized.

Yayy very cool. If you wanted the meringue cookies to be chewy on the inside would you just cook them less?
