    Can i boil the sweet potatoes instead of baking them? I heard it's lower in GI if they are boiled.

    Maybe a a tablespoon of coconut oil will keep them together great recipe I just discovered banana pancakes and was wondering if I can use sweet potatoe instead of bananas but you just gave me a better idea thanks for the post

    I was thinking about making something similar. How about adding some coconut flour to absorb some of the moisture and maybe some flax meal to help bind them better also makes them fluffier in my opinion.. thanks for sharing 🙂

    Ethylene gas is a natural byproduct of bananas, apples and oranges. They speed ripening and are emitted into the atmosphere by their presence.

    Those bananas weren't even ripe yet. Bananas get spotty because they are shipped in an ethylene gas chamber so they'll ripen at a specific rate. In the wild they grow smoothly brown all over their skin (no spots). The spots may be ugly but they don't indicate overripeness..they indicate mechanically induced ripeness.

    Loved them had them for breakfast the black char is the natural sugars caramelising, which is not unhealthy and tastes yummy

    I made a pie out of sweet potatoes and 2 bananas adding one half cup of coconut oil. For the crust crush rice cereal, butter, stevia and the other half cup of cocout oil to make the crust crisp. I added nutmeg to the bananas and sweet potatoes. I put in the freezer and pulled it out to serve one hour before serving. ENJOY

    Hey thanks. I'm gluten intolerant and I can't have soy, either, so this works perfectly. I would never have thought of making something like this. 🙂 Please post more vegan recipes.

    Sorry for the late reply, forgot my password. Decrease your liquid, ie coconut milk. Perhaps your bananas are too ripe. Or, try decreasing the "mushiness" of your potatoes, you don't want undercooked, but when refrigerated they should have a solid consistency. Hope that helps!

    i'm trying it but i'm having trouble getting them to stick together, when i flip um they just fall apart and are still mush, maybe i over baked the sweet potatoes and made them too mushy. I've even given them like 10 minutes on one side to get it to cook thru, any suggestions?
