    I always found frying up some silken tofu was just like scrambled eggs. Lil sprinkle of black salt and pepper, on toast, yum!

    These look really good! I'm definitely going to be making this. I might try using a melon baller to scoop out the potatoes. And diced celery and pickle relish because it's what my mom used to add. Or capers would be good in this.
    Hmmm, for an egg sunny side up, maybe you could start with sea moss/tofu for the base of the egg white — and red lentils, red miso yellow or orange sweet peppers, and sweet potato for the egg yolk.

    I think adding a little tumeric would make it even more appealing giving it more of a yellow color and turmeric is always a good thing for our bodies

    I made something similar "egg salad" but added celery salt, chopped onion, tumeric (and mustard) to make it yellow, and pickle relish if you liked it. It was so close to the real flavor.
