Today's recipe is a collaboration with 10 vegan youtubers (including us) and we've each come up with a vegan brinner recipe. Our recipe is a simple, mushrooms and spinach vegan savoury bread pudding recipe also known as strata.

It tried it today and it was heavenly. So rich and delicious. I didn't use the same filling like theirs because I hate mushrooms and I didn't have nutritional yeast so I skipped it but it turned out amazing. Thanks for the lovely recipe 😘😍

I really want to try this recipe. I don't have access to Nutritional Yeast, does anybody know what would be a good vegan substitute for it or anything else I can add for a richer flavor? Thanks in advance 🤗

I think you read my mind some how. Just yesterday I was wondering how to make a savoury bread pudding as I am trying to avoid too much sugar in my diet. This recipe looks really delicious. I am not a fan of mushrooms so I will try using courgettes instead. What's your take on that? Thanks a lot for sharing this recipe.

Hi Teenuja! It's a great recipe. I have always been a little skeptical of bread pudding but this one convinces me all right 🙂 by the way, I wanted to ask what the source of calcium is for vegans (considering you don't consume dairy)?

This was my favorite idea out of all of the recipes, and it definitely something Chris would love since he always chooses savory over Sweet anything. I'm so glad we did this collab cause now I have a lot of recipes to try on my list!

the recipe calls for coconut milk. Now, since they are also making coconut milk in cartons for regular drinking and calling that coconut milk. There is also coconut milk that is in the can that is vastly different from the carton milk. Any curry dishes that I make I use the canned milk so I assume that is the type to use.

Which is the intended type, assume that I am too lazy to make my own?

This looks sooooo good! I love the simplicity of this and that you can use any veg combination. I also love that you didn't do a tofu scramble or vegan sausage recipe. A lovely twist on brinner. Thank you!
