The omni version is mashed plantains, shredded chicken or ground beef, ketchup and mayo with a thick layer of mozzarella on top. I’m sure you can find a way to veganize it though. Or "delicioso" 😋😛 I'm Puerto Rican and I can't wait to try your recipe. One change I would make, though, is using our traditional "sofrito" which is a blend of peppers and herbs like aji dulce, cilantro, green bell pepper, cilantro (also called long coriander), garlic. My mouth is watering, just thinking about it. Plus!
